Each ingredient maps to a named CoFID 2021 row and food code. Values marked “trace” in the source are treated as zero here.
Per-100g values are multiplied by the sample ingredient grams printed on every dish, then summed without hidden “health” scoring.
Your 0–3 choices multiply the raw dish totals. Kilocalories and kilojoules display as whole numbers; macros display to one decimal place.

Allergen framing: the sample-recipe declarations follow the Food Standards Agency's list of 14 regulated allergens and its March 2025 out-of-home guidance. Written information should support—not replace—a conversation with trained staff.
Not included: supplier “may contain” warnings, substitutions, cross-contact, cooking losses, lab analysis, personal targets or medical interpretation. An adopting restaurant must replace sample recipes with its own signed-off recipes and keep its allergen matrix current.
No API key or external request is needed: the small fallback dataset is local, auditable and works offline. Its pure calculation module can accept a different reviewed provider later without changing the interface.
